  • Yet another post inspired by NQN

    I fell in love with the Ricotta, Chive & Tomato mini tarts that NotQuiteNigella posted a while ago on her blog. Coincidentally I was also chatting with my sister about a particularly good Ricotta tart she's had somewhere in Adelaide. I decided to make some myself the next day, and this is the end products!


     


    Mine was almost exactly the same as the one NQN has posted (duh, given that I'm using her recipe), but I've also added some bacon for extra flavour!

    Ricotta, Bacon, Chive & Tomato mini tarts

    Makes 20 tarts

    2 sheets of bought shortcrust pastry
    125g of Ricotta
    50g of mozzarella cheese (can also be tasty cheese or cheddar)
    1 tablespoon freshly cut chives as well as some for decoration.
    1 egg
    10 cherry tomatoes, cut in half
    1 piece of bacon, cut into tiny pieces
    1 mini cupcakes baking tray, lightly greased.

    1. Preheat oven to 210c. Using a round cutter (mine was 6.5cm in diameter), cut out rounds of slightly defrosted shortcrust pastry and manoeuvre them carefully into the baking tray holes.

    2. Mix together the two cheeses, bacon and egg and chives in a bowl. Spoon 1 teaspoon full into each case. Top with half of the cherry tomato. Bake for 10-15 minutes until pastry and cheese is golden.

    3. Decorate with chive pieces.

    And serve with Tea, or as an entree! I made this as part of an entree for a dinner get together with Dan and Loan.



    And I also made it for the second time for a special delivery to Sarah.


    My second batch, just as good as the first time!

    Oh and be careful as the cherry tomatoes do squirt! Hehe. But what a lovely treat for our palate.

    Last shift today before my 7 days off again, I'm going to make sure I will make full use of the break and be productive. That's my goal! Perhaps a couple more new videos to the collections.
