There has been more than one occasion I've seen various kind of meat wrapped in some kinda of air cured ham (translation: Prosciutto or Pancetta), sometimes Speck . Chicken, Veal and recently lamb brain! I was inspired by Bistro Thierry after seeing yet another Prosciutto wrapped veal appearing on someone else's table so I thought I've try to make my own version. A fancy meal at home, what a great idea! Plus why pay that much money when you can make something similar?
And hence this is my take on the wrap.
Chicken, ricotta and asparagus wrapped in Prosciutto served with a Curried Potato Salad.
It's really very simple and takes less than an hour from preparing and serving the whole dish.
For the Chicken wrap you'll need,
4 Chicken thighs
4 Asparagus
4 Basil leaves
4 tablespoon worth of Ricotta
4 slices of prosciutto
Olive oil
Pepper to taste
Serves 2
(obviously if you need more you could add more of each ingredient)
1. Lay chicken thighs flat on a chopping board and flatten it either with the back of your knife or a meat mallet.
2. Cut about 3cm off the asparagus and discard and then cut the rest in halves. Lay the 1 whole asparagus (which means 2 halves) across inside of each thigh. Place 1 basil leaf and a tablespoon of Ricotta next to the asparagus. Roll up the thighs to close.
3. Lay a slice of Prosciutto flat on the chopping board and roll it around the chicken. Repeat with remaining chicken.
4. Brush fillets with olive oil and cook on a grill for about 15-20 minutes.
5. Season with pepper and serve with salad!
For the Curried Potato Salad, you'll need,
4 medium sized potatoes, peeled and boiled for about 15 minutes.
1 tsp salt
1 tsp ground cumin
1 tsp curry powder
1 tsp turmeric powder
Baby Spinach
Some cherry tomatoes
Olive oil.
1. Cut the cooked potatoes into medium slices and put in a bowl.
2. Combine salt, cumin, curry powder and turmeric in a small bowl. Mix well. Cook spices in a small frying pan over a low heat for 5 minutes until fragrant. Turn the heat off and toss the potatoes with the spices until all coated.
3. Mix the potatoes with baby spinach and cherry tomatoes and drizzles with some olive oil.
Impressive your friends or pamper yourselves! This goes well with a nice glass of white.
Back to work tomorrow! This break was slightly more productive than the last one. Go me! I'll be doing a few night shifts starting on Sunday, so far not liking the idea but we'll see! At least I still have days off after that before starting my rotations in Kingston Centre, back to Monday to Friday routine.
